I grew up in a household with 4 sisters and no brothers. My father had to have an exceptional amount of patience when it came to raising his fun-loving and sometimes crazy daughters. My mom was so talented and made sure we learned all the life skills we ever needed and my dad did an incredible job supporting all of our school and extracurricular activities. He was often seen driving us all over town in our groovy blue Volkswagen Bus. One thing he loved doing was attending our high school football games. But while many of the other fathers were cheering for their sons playing football, my dad was in the stands cheering just as loud for his daughters as we took the field at half time to do our Pom Pom routines.
To thank our father for all he did to support our desires and dreams, we always made sure holidays, especially Father’s Day, were extra special for him. He was such a wonderful cook himself, so it was often difficult to make a “surprise”dinner for him or come up with something he did not already know how to make. I always loved baking something for him since he was more of a savory cook. This wonderfully simple Beer Bread is just a sample of some of the things I learned to bake for him and the rest of the family. It was and still is the perfect compliment to any Father’s Day dinner. You can serve it with steaks, chili or as the bread for your favorite grilled sandwich. So, here’s to all the wonderful dads!
- 3 cups all purpose white flour
- 1 tablespoon baking powder
- 1 tsp salt
- ¼ cup sugar
- 1 12 oz. can or bottle of beer (and if you are from Texas, it better be Shiner Bock!)
- ½ cup butter (1 stick), melted
- Preheat oven to 375 degrees
- Prepare a 1½ pound loaf pan with cooking spray
- Sift together flour, baking powder and salt
- In a mixing bowl, combine sugar with flour mixture
- Pour in beer and mix with a fork, until combined. Do not over mix
- Stir in melted butter. Mix until combined
- Pour into loaf pan and bake for 1 hour
- Cool on a wire rack for 15 minutes
- Remove from loaf pan and cool completely before storing
