Baked Italian Meatballs

Serves: 30 meatballs
- 2 tsp olive oil
- 1 pound lean ground beef
- 1 pound ground veal or pork
- ½ cup plain bread crumbs
- ½ cup milk
- 1 onion, diced
- 2 eggs
- 2 tablespoons dried parsley
- 2 large cloves garlic, minced
- 1 teaspoons salt
- 1 teaspoon ground black pepper
- ½ teaspoon red pepper flakes (optional)
- 2 teaspoon dried Italian herbs
- ¼ cup grated Parmesan cheese
- Preheat the oven to 425 degrees. Cover a small baking sheet or baking dish with foil. Brush with olive oil
- Mix remaining ingredients together in a large bowl
- Using a medium size stainless steel scoop, portion out meatballs one at a time. Form into balls and place on prepared baking sheet
- Bake for 20 minutes
- To get crispy "fried look" to the meatballs, place under broiler for 6 minutes, turning once after 3 minutes
- Use meatballs in your favorite recipe or when cooled, place in freezer bag or freezer safe container and freeze for up to 3 months
