Ok, it’s time to celebrate!  Today my cooking blog, the Memorable Kitchen, is 1 year old!  First and foremost, I want to thank all of my followers. 

All of you who have visited my site, read my stories, tried some of my recipes, and encouraged me to keep going with my blog.  It has been an incredible year.  

When my daughters convinced me to get going on my blog, I will admit, I was a little nervous.  

I knew nothing about starting a blog, I was not that great of a food photographer and I was not very savvy with social media.  

The only thing I did know in my heart of hearts is that I love to cook, I love to create recipes and I especially love to share my favorite recipes and stories.

So, here I am one year later.  I have learned so much and I am really excited about the goals and plans I have for this next year.  

And to help celebrate, I am sharing one of my most favorite cake recipes, Nestle Toll House Cake.  

Nestle Toll House Cake because it is so whimsical with its four layers of chocolate chip cookie cake all covered in a silky, smooth chocolate frosting.  Perfect for any celebration!  Again, thank you for an amazing year and thank you for celebrating with me.  Here’s to a great second year!

Ingredients
  

For the Cake

  • 1 cup butter, softened
  • 1 cup firmly packed brown sugar
  • cup white
  • 4 eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 2 cups all purpose flour
  • 1 12 ounce package (2 cups) Nestle Toll House mini semi-sweet chocolate chips, divided

For the Frosting

  • 1 cup Nestle Toll House mini semi-sweet chocolate chips, reserved from 12-ounce package
  • ¾ cup butter, softened
  • cups confectioners sugar
  • 2 teaspoons vanilla extract

Instructions
 

To make the Cake

  • Preheat the oven to 350 degrees.
  • Grease bottom of 15½ x 10½ x 1 inch baking pan. Line with waxed paper or spray with nonstick cooking spray.
  • In a large bowl, combine butter and sugars. Beat until creamy, about 2 minutes.
  • Add eggs, one at a time, beating well after each addition.
  • Add vanilla extract and salt. Mix well.
  • Gradually add flour. Stir in 1 cup of Nestle mini chocolate chips.
  • Spread batter into prepared pan. Bake at 350 degrees for 20-25 minutes. Cool completely.

To make the Frosting

  • In a microwave safe bowl, place remaining 1 cup of mini chocolate chips. Microwave on high for 1-2 minutes, stirring every 30 seconds until smooth and melted. Set aside an cool slightly.
  • In a small bowl, combine butter and confectioner's sugar. Beat until creamy.
  • Add melted chocolate and vanilla extract. Blend until smooth.

To Assemble Cake

  • Loosen sides of the cake. Invert onto a lightly floured cloth. Peel off waxed paper.
  • Trim edges of cake. Cut cake across the width of the cake into four 3¾ x 10 inch sections.
  • Place first cake layer on a serving plate. Spread 3 rounded tablespoons of frosting on first layer.
  • Top with second cake layer. Repeat layers of frosting and cake. Frost sides and top of cake.
