Sometimes just a few ingredients can make for an incredible dish. This smoky, spicy Chipotle Chile Roasted Corn, is just the side dish for fish, chicken, or a simple grilled steak. Chipotle Chile Powder has quite a kick, but for those that prefer a milder version, simply substitute mild chile powder or smoked paprika. A little milder, but just a savory!

Ingredients
- 4 ears fresh corn
- 4 teaspoons olive oil
- 1 teaspoon Chipotle Chile Powder, Mild Chili Powder, or Smoked Paprika
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 350 degrees.
- Remove the husks from the corn.
- Tear off 4- 8 x 12 pieces of aluminum foil.
- Place ½ teaspoon olive oil on each sheet of foil.
- Place 1 ear of corn on each piece of foil and roll in olive oil to coat.
- Mix together Chili powder or smoked paprika, onion powder, salt and pepper.
- Sprinkle evenly over ears of corn.
- Secure foil around corn, closing tightly.
- Place on a baking sheet and place in preheated oven.
- Bake for 30 minutes.
Note: Chipotle Chili Powder is very spicy. Use mild Chili Pepper if you do not like things too spicy! You can also grill corn on a medium hot grill for 10 minutes, turning often.
