Pumpkin Chocolate Chip Bread

  • 2 cups all purpose flour
  • 1 cup white whole wheat flour
  • 1 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 cup canola oil
  • 2½ cups sugar
  • 4 eggs
  • 1 15 oz can pumpkin
  • 1 teaspoon vanilla extract
  • ⅓ cup water
  • 1 12 oz bag dark chocolate chip
  1. Preheat the oven to 350 degrees. Spray two 9" x 5" loaf pans with flour based cooking spray.
  2. In a medium sized bowl, combine flours, salt, pumpkin pie spice and baking soda. Set aside.
  3. In a large mixing bowl, combine oil and sugar. Mix on medium speed for 2 minutes.
  4. Add in eggs one at a time, mixing until completely combined.
  5. Add in pumpkin, vanilla and water. Mix together until combined, about 1 minute.
  6. Stir in dry ingredients with a spoon or spatula. Stir until combined. Fold in chocolate chips.
  7. Pour batter into prepared pans.
  8. Bake for 60-70 minutes until toothpick inserted in center comes out clean.
  9. Cool on a wire rack for 20 minutes. Remove from pans and cool completely.
  10. Store in plastic bread bags or foil. Bread can be frozen for up to 6 months.
