Chicken Parmesan Pasta

  • 2 cups penne or rigatoni pasta
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, diced
  • 2 large cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1-25 oz jar marinara sauce
  • 1 teaspoon sugar
  • 1½ teaspoons Italian seasoning, divided
  • 1 8 oz package shredded Italian cheese blend
  • ½ shredded parmesan cheese
  • ¾ cup Italian bread crumbs
  • 3 tablespoons butter, melted
  1. Preheat the oven to 350 degrees.
  2. Place large saute pan on medium high heat. Place olive oil in pan.
  3. Place onions in pan, turn heat down to medium and cook for 10 minutes until soft and translucent. Add garlic to pan and cook for 1 minute. Place shredded chicken in pan and cook for 2-3 minutes until heated through.
  4. Pour in marinara sauce, sugar and 1 teaspoon Italian seasoning. Cook for 2-3 more minutes until heated.
  5. Cook pasta according to package directions. Drain. Combine with marinara sauce mixture. Set aside.
  6. In a small bowl, combine bread crumbs, melted butter and ½ teaspoon Italian seasoning, and parmesan cheese. Set aside.
  7. In a medium baking dish (8 x 11), pour ⅓ of the pasta and sauce mixture. Cover with ½ of the shredded Italian cheese blend. Cover with ⅓ of pasta mixture and then the rest of the shredded cheese. Top with remainder of the pasta mixture. Top with bread crumb mixture.
  8. Bake for 25-30 minutes until hot and bubbly.
