Baked Italian Meatballs

Ingredients
  

  • 2 tbsp olive oil
  • 1 pound lean ground beef
  • 1 pound ground veal or pork
  • ½ cup plain bread crumbs
  • ½ cup milk
  • 1 onion, diced
  • 2 eggs
  • 2 tbsp dried parsley
  • 2 large cloves garlic, minced
  • 1 teaspoons salt
  • 1 teaspoons ground black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 teaspoon dried Italian herbs
  • ¼ cup grated Parmesan cheese

Instructions
 

  • Preheat the oven to 425 degrees. Cover a small baking sheet or baking dish with foil. Brush with olive oil
  • Mix remaining ingredients together in a large bowl
  • Using a medium size stainless steel scoop, portion out meatballs one at a time. Form into balls and place on prepared baking sheet
  • Bake for 20 minutes
  • To get crispy "fried look" to the meatballs, place under broiler for 6 minutes, turning once after 3 minutes
  • Use meatballs in your favorite recipe or when cooled, place in freezer bag or freezer safe container and freeze for up to 3 months
