I was given this recipe by a friend when we were stationed in Germany. When we lived there, I was forever baking things for parties, coffee’s, or for any other reason I could find.
The first time I made these brownies, I could not get over how simple the ingredients were and how easy it was to make. But, of course, it had to taste good too.
So, start with a super moist and chocolatey brownie…check! Smooth on a creamy, buttery, mint layer…check! And cover it all in a silky and decadent chocolate glaze…check!!! It all adds up to the most chocolaty, creamy, minty, rich, easy, unforgettable brownie you will ever taste.
I can not even remember who gave me the recipe and I even misplaced it for a few years. Yikes! But, I can honestly say, over the years, I have probably made this Tried and True favorite more than I can count. Now, you can enjoy it and file it as one of YOUR favorites!
Chocolate Mint Brownies
Ingredients
For the Brownie Layer
- ½ cup butter (1 stick), softened
- 1 cup sugar
- 4 eggs
- 1½ cups Hershey's Syrup
- 1 cup all purpose flour
For the Mint Cream Center
- 2 cups confectioner' sugar
- ½ cup butter (1 stick), softened
- 1 tbsp water
- ½ to ¾ teaspoons mint extract
- 5 drops green food coloring
For the Chocolate Glaze
- 6 tbsp butter, softened
- 1 cup Hershey's Semi-Sweet Chocolate Chips
Instructions
To Make the Brownie Layer
- Preheat the oven to 350 degrees. Prepare a 13x9x2 inch rectangular pan with non-stick cooking spray.
- In a large mixing bowl combine butter and sugar. Mix on medium speed until smooth and creamy.
- Mix in eggs, one at a time, and then Hershey's Syrup. Mix until smooth.
- Mix in flour until smooth. Pour into prepared pan and bake for 25 to 30 minutes. The brownies will look wet on top but test for doneness by lightly touching center. If it springs back it is done.
- Cool completely in pan.
To Make the Mint Cream Center
- In a small bowl combine all ingredients; beat until smooth.
- Spread on cooled brownie layer. Cover and chill.
To Make the Chocolate Glaze
- In a small saucepan, over low heat, melt butter and chocolate chips. Mix with a whisk until smooth. Remove from heat and let cool slightly. Pour over Mint Cream Layer.
- Cover and chill for at least 1 hour.
